Cake Courses

About our courses - We are delighted to be able to share some of our knowledge with you and have planned a number of courses suitable for complete beginners and also those with some cake decorating experience but who want to learn a particular skill. Limiting our courses to 8 people (minimum of 4)means that everyone can get maximum benefit and have plenty of fun at the same time! Each lesson will include a combination of professional demonstrations and hands-on practise and you can enjoy full use of all our equipment for the duration of the lesson. Kindly note that these classes are directed towards adult learning and are not suitable for unsupervised children - especially those under the age of 15.

Waitlist courses - Some of our specialist courses are listed according to demand so please register your interest with me at the e-mail address below. Once I have 5 students on waitlist a date will be scheduled - we will update the course details below on a regular basis so that you can easily see how many people are on waitlist and how close we are to scheduling a date.

Dates of operation - Our courses are usually held on a Saturday and operate between the first weekend in February through to the last weekend in November. We usually take a well earnt rest during the months of December and January so that we can concentrate on our wedding cake orders.

Deposit/payment - We require a deposit of $50 to secure your place and this can be paid by cash, cheque, Eftpos or straight into our Westpac account (03 0406 0748609 00) using your name and the course date as a reference. Your deposit payment must be made within 7 days of booking the course or your place will be cancelled and released for re-sale - it is your responsibility to ensure that prompt payment is made, please do not expect to book a course if you are not in a position to make a financial commitment to Strawberry Sky.

Cancellation / transfer - Kindly note that we uphold a strict policy whereby your deposit is only refundable / transferable in circumstances where Strawberry Sky has had to make a course cancellation, if you are unable to participate and we cannot replace your position on the course you are not eligible for a refund or transfer of deposit funds. Strictly no refunds under any circumstances where cancellation is within 7 days of the course date. Should we have to cancel a class for any reason then your funds are fully protected and you will be offered the option to transfer to an alternative class or receive a refund into your bank account.

 

Baby Shower treats

Course Details

This lovely class is suited to anyone with a friend or family member (or mum herself) with a little one on the way. During the course you will learn how to model a fondant baby, create an edible bootie plus some gorgeous cupcake and cookie designs. Cookies and cupcakes are supplied for the class and you will be able to take home all of your edible treats at the end of the day.  Materials and equipments are all available for you to use on the day.

Bride and Groom - Previous experience in cake decorating would be an advantage for this course.

Course Details

Due to popular demand this brand new course is listed for those wanting to improve their skills in the art of model making. Specifically targeted to those wanting to improve their modelling skills. A very versatile couple of characters created for people who not only want to make a ‘bride and groom’ but also those that simply want to learn a standing boy and girl ? the dress can be adapted to any design, long or short and yes, they are legs and cute little toes that are hiding under the dress! You will be guided through each stage of making this lovely pair with demonstrations and direct assistance (where required) throughout the course and, at the end of the day, you will go home with your own personalised bride and groom.

 

I do recommend that you have some experience at working with fondant and gumpaste before partaking in this course.

Flower making - A little experience in cake decorating would be an advantage for this course.

Course Details

I am very proud to announce this beautiful flower making course which not only provides instruction on a rose in full bloom but also the gorgeous fringed peony, as seen on our famous Trelise Cooper cake. 

 

Experience in cake decorating is not essential for this course but it would be an advantage.

Ombre barrel cake - suitable for all skill levels

Course Details

This brand new class has been developed for those who love working with frosting. You will be given a receipe so that you can bring 2 X 6" round (15cm) cakes to class - during the day you will learn how to level your cakes, stack, crumb coat, mix your frosting to achieve perfect colour graduation and pipe perfect rosette swirls. You will also learn how to cover your board in fondant and apply a ribbon for that truly professional finish.

 

A great day out and suitable for all skill levels!

Chocolate Parcel - suitable for all skill levels

Course Details

We are very pleased to bring this popular class back to the timetable!  You will need to bring your own 6" square (15cm) cake (recipe supplied) and you will be shown how to level and cover your cake with chocolate fondant to create a smooth, professional finish. You then go on to learn the art of chocolate transfers to create a beatiful bow and ribbons, entirely edible and made completely from delicious milk chocolate! In addition to all this you will learn how to use moulds and roll perfect fondant marbles to complete your design. This is a great course where you will learn an array of new skills and is suitable for anyone ...........just turn up with an apron and a smile!

Ruffles, pleats, drapes and bows - Intermediate / Advanced

Course Details

For this course you will need to bring a 7” square cake with you (recipe supplied) and you will learn how to carve your cake into a handbag shape, crumb coat and cover it with fondant. You will then learn how to create beautiful pleats for the back of the bag, drapes, several methods for creating ruffles on the front of the bag plus you will make your bag handle and cover the board with draped fondant!

 

This is a brilliant course as it will give you an insight into carving and creating unusual shapes plus the pleats, ruffles and drapes are skills often requested for wedding cakes so it will be truly beneficial all round!

 

This course is suitable for those with some experience at cake decorating and it is a pre-requisite that you have attended one of our Back to Basics  classes (which includes Easter Cake and Christmas Cake) or our Chocolate Parcel class. If you have not attended any of my courses previously then you will need to demonstrate that you are comfortable at working with fondant (i.e. you may wish to e-mail me a couple of pictures of cakes that you have made for family and friends etc).

Giant floral cupcake - Some cake decorating experience would be an advantage

Course Details

We are extremely excited to announce this brand new course to our schedule after popular demand! This 2-day course will provide a whole range of extremely useful skills which can be used over and over again at home. Everything is included with the cost of this course - all you need to bring is an apron, a smile and your imagination!

 

Day 1 - You will learn a range of sugar floral skills including roses and gerberas. In addition to to this you will learn how to create fondant numbers, a fondant message banner and paper spirals.

 

Day 2 - You will learn how to assemble and decorate your giant cupcake using various mediums including white chocolate, piped buttercream and how to cover your board in fondant. You will then complete your design using all the decorations used on Day 1 and paint a message onto your fondant banner.

Creative cupcakes - suitable for all skill levels

Course Details

This course has been re-designed for 2014 and now includes a vast array of very achievable designs suited to everyone, even the most novice of decorators. Join us for a day of fun creating delicious cupcakes, improve your knowledge of various cake medium such as fondant, gumpaste and frosting. Go home with 6 beautifully decorated cupcakes including an adorable teddy bear, a bathing pig, lion, caterpillar, ice cream and ballgown. Everything is supplied for this course, just turn up with a smile and an apron!

Modelling Course - Suitable for all skill levels but some cake decorating experience would be an advantage

Course Details

This lovely course has been designed and listed by popular demand from students who wanted to create animals and learn more about modelling. You will learn to create Elsa the Elephant, Leslee the Lion and Margaret the Monkey. This course does not include any instruction on covering a cake but a cake dummy will be supplied on the day for you to skewer your models into and take home.

Back 2 Basics - Suitable for all skill levels

Course Details

This one day course is a great starting point for all newcomers to cake decorating. You will need to bring your own 6" round (15cm) cake (recipe supplied) and you will be shown how to split and fill your cake and apply a crumb coat. After that, you will cover your cake with icing to create a smooth, professional finish. In addition to this you will learn to create a beautiful fondant bow and utilise moulds and cutters to complete your design. This cake design is extremely versatile and can be adapted for a boy or girl, man or lady. This is a great course where you will learn an array of new skills!

Course Details

This course includes a vast array of very achievable designs suited to everyone, even the most novice of decorators. Christmas cake class (frosted finish) - Suitable for all skill levels

Course Details

This one day course is a great starting point for all newcomers to cake decorating, particularly those wanting to learn more about frosting. You will need to bring your own 6" round (15cm) cake (recipe supplied) and you will be shown how to cover your cake with ombre frosting and achieve a professional finish. In addition to this you will learn to create three lovely snowmen who I have named 'Snolaf'  and utilise snowflake cutters to complete your design. This cake is a really fun design for Christmas and provides a great course where you will learn an array of new skills!

A supplement of $10 will be charged if you arrive at the class with a cake that is substantially larger (more than 2") than the recipe provided and this is to accommodate the additional icing and larger board that will be required.

Santa Sleigh - Intermediate/Advanced

Course Details

I am very excited to announce this new class which contains everything Christmas related! You will need to bring a 7" square fruit cake (recipe supplied) and then you will learn how to shape and decorate this into santa's sleigh, complete with santa, rudolph, a cake pop santa sack and cookie presents. This will be a class filled with fun where you will go home filled with Christmas cheer and a whole heap of new skills.

A supplement will be charged if you arrive at the class with a cake that is any larger than the recipe provided and this is to accommodate the additional icing and larger board that will be required.

Piping and Royal Icing skills - Intermediate / Advanced

Course Details

This course is perfect for those of you who have done some cake decorating and want to increase your skill base. I will be teaching a wide range of skills related to piping and Royal icing including: line work, dots, stencilling, brush embroidery, string work, run-outs, writing, piped roses and piped dahlias - phew! So many skills and such lovely little cakes.

 

In terms of pricing, you have two options - I can supply 3 X 3” cakes ready iced and prepared for you to work on during the lesson for $150 or you can opt to bake and ice your own cakes (or ice dummy cakes) and bring them with you on the day for $100 ? my only condition to this is that you please ensure that you bring 3 X separate 3” (7.5cm) iced cakes or dummies so that every student’s work is consistent and you all end up with the same design at the end.

Romantic Wedding Cake

Course Details

This beautiful course has been listed by popular demand! During the day you will learn how to stack your cakes professionally and create some beautiful decoration techniques to create a truly stunning wedding cake including ruffles, quilting and sugar lace. You will need to bring a 7" round cake, already iced in fondant plus a 5" round cake un-iced. I will provide a 3" round cake dummy iced in fondant for the top tier. All materials and equipment to decorate your cake will be fully available for you to use during the day.

 

Course requirement - you must have previously worked with fondant and feel confident enough to be able to cover one of the two cakes alone at home to bring to the course.
